Gnocchi Bake

I wish that I could say that I make my own gnocchi from scratch, but at this point in my life, I simply just don’t have the time. Thankfully though it is easy enough to pick up store bought gnocchi for a reasonable price these days. My kids love gnocchi and this recipe is super quick and easy to make, and it is very tasty to boot!

Baked Tomato and Basil Gnocchi

Ingredients:

  • 750 grams Gnocchi
  • 500 mls Pasta Sauce
  • 1 Onion
  • 2 cloves Garlic
  • 300 mls Cream
  • 2 tbsps Olive Oil
  • 3 tbsps Basil Fresh
  • 90 grams Tomato Sun Dried
  • Approx 100 grams Parmesan Cheese Grated

Instructions:

  1. Boil water for pasta.
  2. Finely chop onion and basil.
  3. Chop sun dried tomatoes.
  4. Heat oil in a large frying pan (I use an electric frying pan.)
  5. Add onion and garlic and cook for another couple of minutes.
  6. Add sun dried tomatoes.
  7. Add pasta sauce to frying pan and turn down heat slightly. Allow to simmer for 3 – 4 minutes.
  8. Add cream to frying pan and mix well. Turn up heat slightly allow to bubble then reduce heat and allow to thicken.
  9. Add basil.
  10. Place gnocchi into boiling water and cook as per instructions.
  11. Turn on grill and heat on high.
  12. Drain gnocchi.
  13. Add gnocchi to the frying pan and combine well.
  14. Pour contents of pan into a lasagna style dish and even out as required.
  15. Top with grated parmesan and place under the grill until cheese has melted as is a golden brown colour.
  16. Serve with some warm garlic bread!

Saturday: Grand Final Day BBQ

Sunday: Roast Chicken and Vegetables

    Mmmmm I used to LOVE gnocchi!!! I am yet to find a good gluten free version to introduce to the girls and rekindle my love of good Italian carbs. I mean food! Good Italian food! lol

    Hi I am wondering what your family eat as snack? My 2 year old is always hungry, he would eat fruit til it came out his ears but I don’t want him to have too much. Just wondering what other’s give kids for healthy snack?

    I wanted to make my own gnocci because even the fresh versions have presevravtives (which I want to avoid)

    I must add it to my list.
