Spaghetti Omelette

A new blog that I have started reading Gourmet Worrier posted recently Froġa tal- għaġin – Spaghetti Omelette. You really should go to Ms Gourmet’s blog and check out her photos of this dish. They look fantastic, unlike mine – but at least you get the idea from the photos about what I was cooking! :)

This was a very easy and quick recipe to cook. We had it for lunch, but it would be perfect for me to throw together with a few more ingredients for dinner after the boy’s football training one night.

I doubled the ingredients to cater for my large brood, which worked fine, with the exception of turning it over. It was too heavy to do all at once, so I had to cut it in half and then flip each section. I managed to blend it back together though and remove it whole from the pan which I was pretty happy with.

I also used Parmesan cheese as I didn’t have any grana padano on hand and I think that worked well. All the kids ate it and I was happy to cook something new. It was the first new recipe that I have tried all year!

Family Menu Plan For The Week

Baking: Banana Cake. My 8 year old son has been inspired by seeing his older brother cook tacos and specifically asked that he make banana cake this Sunday night, to go in the school lunch boxes.

Monday: Beef Stroganoff

Tuesday: Shepherd’s Pie

Wednesday: Left Overs

Thursday: Spicy Chutney Chicken with Mixed Rice

Friday: Spaghetti Bolognaise

Saturday: Tacos

Sunday: Chicken Wings, Baked Potatoes and Corn

    Oh, you are a lifesaver! I just sat down thinking “what am I going to cook for dinner tonight” and saw your post. I am going to add some diced chicken and vegies to it and see how it goes :) Thanks!
