Healthy and Simple Recipes

After a very quick two weeks, we are back to school on Monday. Personally I could do with another week away from the school and after school running around!

The family meals for the next few weeks are going to be very easy to cook and quick to prepare. This term we have after school activities four out of the five nights. This is really not desirable, but with the three children at school all doing swimming and then one other activity, that is just the way it falls. :(

You might also notice that for the next couple of weeks pumpkin soup will be on the menu. When we went away for Easter in the country, my dad gave me a very large sack of pumpkins. Pumpkin soup is a favourite with my kids, so we will be using up the pumpkins that way.

Our Family Menu Plan for this week.

Baking: Anzac Biscuits – ANZAC day is this Saturday!

Monday: Pumpkin Soup

Tuesday: Fried Rice

Wednesday: Left Overs

Thursday: Creamy Chicken and Tomato Stew

Friday: Lamb Chops With Steamed Vegetables

Saturday: Tacos

Sunday: Chicken Schnitzel and Steamed Vegetables

What a great menu, I’m stealing some ideas this week. We are officially right into school and activities stuff this week. Personally I didn’t think it was possible for me to get any more insane, but I think this week will prove me wrong.

Kin – Hope you have settled into your new city well. You manage to juggle so much with study, kids, swimming etc, it is pretty amazing.

I haven’t had lamb chops since I was a child. Sounds wonderful!
