Chicken sandwich recipe
Like most of you, we are in the midst of many Christmas catch ups. It is a great time of the year to catch up with friends. Normally it is filled with lots of outside activities, but the weather has been unseasonably wet and cold.

I have a couple of favourite recipes that I like to use around this time of year and these chicken sandwiches are scrumptious and easy to make. This recipe has the additional bonus of being able to make the chicken mixture the night before. If you have an early start the next day, you can just put the sandwiches together quickly.

Chicken sandwich recipe

Ingredients:

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 2 cups rocket lettuce leaves
  • 1 cup whole egg mayonnaise
  • 1/3 cup sour cream
  • sea salt
  • cracked pepper
  • 2 loaves of bread

Method:
(1). Dice chicken into small pieces.
(2). Heat oil in a pan and cook chicken until golden brown. I like it to have a lot of brown as I prefer the flavour this way.
(3). Place chicken in medium size mixing bowl
(4). Shred rocket and add to mixing bowl.
(5). Combine sour cream, mayonnaise, salt and pepper in a small bowl.
(6). Add mayonnaise mix to the chicken and blend in.
(7). Mixture can be used straight away or refrigerated over night.
(8). Butter bread lightly and spoon mixture on to the bread. Place second piece of bread on top.
(9). Press lightly on the sandwich and cut crusts off all sides.
(10). Cut sandwiches in half and place on serving dish.
(11). If you are not serving immediately, cover with plastic wrap and refrigerate.

Nice menu, even though I have never heard of “rocket”. Sounds like something my boys would eat.

Oooh, I do love a good sandwich filling recipe. This sounds lovely (so much better than our tired old ham and cheese sandwiches).
