Menu Plan Monday – Getting Warmer

We had absolutely beautiful weather when we were away in Mildura and we have also managed to have quite a bit of sunshine in Melbourne since we have been back.

With this in mind when I asked the children for their contributions to the family menu plan this week, I explained to them that now as it is getting warmer with spring, we will start having lighter meals and less of the hearty winter dishes we have been having.

They understood this concept quite well, so instead of having sausage and vegetables this week, they requested sausages and salad! I did admire their thought process with that one.

Little Rascal however could not let go of his request for pumpkin soup and as pumpkin is still in season at the moment, we will be having that this week. Here is what else we are having:

Monday: Pumpkin Soup

Baking: Chocolate Balls
These have been on pretty high rotation recently, requested by the children but I really need to find some new treats that the kids cook with me to add a little bit more variety. Any recipes or suggestions are most welcome! :)

Tuesday: Tuna Rice

Wednesday: Moroccan Minted Beef

Thursday: Pasta with Chicken and Spinach

Friday: Left Overs

Saturday: Tacos

Sunday: Sausages and Salad

Hedgehog slice – alternative to the choc balls
Combine well all ingredients – 125 g of granita biscuits crushed; 125 g melted butter; 1/3 cup castor; 1/2 cup cocoa powder; 1 cup chopped nuts/seeds of choice (walnuts/pecans/sunflower seeds); 1/3 cup LSA; 1 lightly beaten egg. Press firmly into slice tin.
Icing – melt together 125g cooking choc; 30g butter and cover slice.
By adding some nuts/seeds and LSA my conscienous is eased as there is a little substance to the slice. Can alater to suit tastes.

We are starting to change to lighter meals too with the weather warming up.

Must be time to clean off the BBQ too methinks…..

The Moroccan Beef sounds good – have you posted that recipe yet?

We’re also slowly getting into lighter meals. But as it was quite cold and rainy over the last few days, we’ve had some yummy chicken and veggie soup.
