some great idea's there.

one that is a bit of a hit here is cruskits or that sort of thing, john west jar tuna spread in tomato and basil, tasty cheese slices, tomato and salt and pepper if wanted.
whenever i serve this for a snack at lunchtime i always have to end up making more!!!
So quick and easy.

I might try this cookie dough idea!

I'm a cookie dough freezer girl as well. Just recently I've also started making a slice twice a week (usually a quick, no bake one). Even though the kids lurv them I can usually manage to save a couple of pieces :-) And if everything else is gone, we always always have water crackers and cheese (and sometimes tomato).

I am a consistent over caterer - our fridge is always too full and I can never do just a plate of biscuits - it becomes a production. I HATE that about myself!!!!
I think it is because I grew up in PNG and then lived in rural and remote places.
Nowadays, I always have rice crackers and dip in the fridge and ready to go at a moments notice.
If only the house always looked as though I was expecting company thought!!!

Naomi - new you seemed like a good sort! Your version of chutney scrolls sound a lot more tasty - I love chili.

Marita - I didn't even know that you could freeze cookie dough. I am definitely going to freeze some for my sister. She baby sits a lot for me and never bakes, so it will be a nice way to repay her for her time.

Forgot to add -

Couple of other things I've found work really well.

Freezing sandwiches. Once a month I do our grocery shop. The following days are rather busy as I make up and freeze the following sandwich combos.

- vegemite
- jam
- fairy bread
- stras / lunch meat and cheese
- ham and tomato

The last two I cook from frozen in the sandwich toaster. The first three I pull out in the morning to defrost. Never had any complaints and saves me time on our busy days.

Also corn thins - like rice cakes except with corn, is popular with the kids just plain. Adults can top with flavoured sandwich tuna.

Like Naomi I keep unbaked cookie dough in the freezer - works a treat. I love to bake but hate the effect on my waistline so often prepare vast amounts at once and either freeze the cookie dough or the end product (in the case of muffins and cakes where the mix does not freeze well).

http://leechbabe.wordpress.com/2007/11/03/chocolate-chip-cookies/

For friends visiting with young children I find a fruit platter is always popular. If you cut the fruit up into bite size pieces it disappears really quickly.

One of my fav. Christmas gifts I do is a laundry basket full of baked goods. In this I also include rolls of frozen unbaked cookie dough with instructions so the gift keeps giving for a little longer. This is especially good for single friends or couples who don't often bake. By preparing the dough you have taken most of the hard work out for them.

I have a few (surprising for one as disorganised as I am)...

- Savoury scrolls, much like your chutney/cheese ones except with refried beans, chilli and garlic

- A container of baked goodies in the freezer... cakes, muffins and sometimes 'refrigerator bikkies' uncooked in a roll, ready to slice and bake.

I grew up in the country too, and I'm the same... GOTTA feed people when they visit! I always figured it was the European influence, but maybe it's just plain country :-)
